A sharp washed rind that will delight amateurs of strong cheese. It is as strong as it smells. It is though surprisingly long and complex in the mouth with a hint of blue vein taste at the end. The texture is crumbly when young and soft and creamy when older.
It goes well with wine such as Chardonnay, craft beer or cider, and food such as Muscatels, quince paste, or crusty bread.
